Development of a Sustainable Business Model of a Healthy and Environmentally Friendly Food Enterprise

Currently, there is public interest in healthy and environmentally friendly nutrition. The study revealed that the demand for such food exceeds supply. The purpose of the master's thesis is to develop a sustainable business model for an enterprise that specializes in healthy and environmentally friendly nutrition, maintaining the competitiveness of this enterprise. Criteria were laid out that allow us to call food healthy. The definition of an environmental and ethical food establishment has also been clarified. Interviews were conducted with owners of public catering establishments in Moscow, during which experts shared the difficulties they encountered when doing business. The target is a healthy and environmentally friendly food company. The subject of the study is the mechanisms and factors influencing the successful implementation and operation of a sustainable business model in the field of healthy and environmentally friendly nutrition. It was found that people began to take a more conscious approach to the issue of nutrition, as demonstrated by the results of statistical surveys. This opens up broad prospects for the development of enterprises offering healthy food. The proposed business model allows you to run a business with a payback period of up to five years. It was important to take into account factors that could affect the activities of restaurants, to avoid risks associated with restaurant activities, of which there are quite a lot. A healthy and environmentally friendly food company can be a successful business, since in Moscow there are few suitable offers that could cover this request. There is also active government support, and strategies are being developed to promote the concept of healthy eating. Businesses that are environmentally conscious and use resources sustainably can attract more guests and create a more attractive image. Also, by implementing sustainable practices, energy efficiency can be achieved, allowing you to incur lower costs. The restaurant business can be ethical, healthy and sustainable, and the proposed business model confirms this.
