In recent years, the Lean Startup methodology has become a popular strategy for launching new ventures and managing projects effectively. This study uses Lean Startup principles to develop and implement a canteen in an HSE university student residence. It explores the feasibility and key success factors of this initiative, focusing on why students choose to eat out, their willingness to use a dormitory canteen, and the potential positive impact on their academic focus. Using a mixed-methods research design, the study combined quantitative survey data with qualitative insights from semi-structured interviews and focus groups. The survey was conducted among 450 students, with a response rate of 34.4%, resulting in 155 complete responses. Key findings indicate that a significant portion of students regularly cook, with 39.4% cooking daily and 45.8% a few times a week. Despite this, 88.4% of respondents expressed a willingness to use the canteen if available. Additionally, 42.6% of students eat out a few times a week, and 26.5% do so daily. The results highlight the need for diverse, affordable, and nutritious meal options to cater to student needs. Extended operating hours, online menu availability, and loyalty programs are also crucial for increasing canteen usage. This research provides practical recommendations for university administrators and canteen planners to enhance student well-being and academic performance by addressing students' dietary habits and preferences. Overall, the study demonstrates that using Lean Startup principles can effectively guide the development of a canteen, ensuring it meets student needs and preferences while supporting their academic success. Future research should explore the long-term effects and include more qualitative insights to better understand student behaviors and preferences.
